Ingredients:
3 eggs, seperated
⅓ cup melted chocolate at room temperature or chocolate syrup
1 ½ cups all-purpose flour
½ cup sour cream
¾ cup milk
¼ cup vegetable oil
2 tsp. baking powder
¼ cup butter, melted
½ tsp. baking soda
2 cups raspberries
1 tbl. granulated sugar
1 cup whipping cream
Method:
Preheat oven to 425°F.
Beat egg whites until stiff. Set aside. Mix flour, baking powder, baking soda and sugar together. Beat egg yolks with sour cream, milk and melted chocolate (or syrup). Mix oil wtih melted butter, using a small bowl. Add sour cream mixture-alternate with oil and butter mixture-to dry ingredients. Mix until smooth. Fold in egg whites.
For first waffle, grease waffle iron with non-stick spray. Pour ⅓ cup of batter into waffle maker. Repeat for remainder of mix. Whip the whipped cream until stiff and fluffy but not dry.
Top hot waffles with raspberries and whipped cream. Decorate plate with heart-shaped chocolates, chocolate shavings, flavored syrups, Valentine's Day trinkets, etc. Serve'em up with hugs and kisses and enjoy your Valentine's Day delight!
Makes 8 waffles.
