Beach Cobb Caesar Salad Wraps
with Pizza
Goat Cheese, Olive Oil, Roasted Red & Yellow Peppers

Ingredients
1 ½ Tbsp. white wine vinegar
1 Tbsp. finely minced shallot
½ Tbsp. Dijon mustard
¼ tsp. kosher salt
½ tsp. freshly ground black pepper
2 Tbsp. extra virgin olive oil
5 cups mixed salad greens
4 oz shredded cooked chicken breast
1 hard boiled egg, peeled and chopped
1 strip bacon, cooked and crumbled
1 medium tomato diced
½ cucumber, seeded and diced
½ avocado, diced
¼ cup crumbled bleu cheese (optional)
4 whole wheat wraps
French Bread
4 oz Goat Cheese
2 Tbsp. Extra Virgin Olive oil
Roasted Red and Yellow Peppers

Method
First whisk vinegar, shallot, mustard, salt and pepper together in a small bowl, then whisk in extra virgin olive oil until all is combined and emulsified. Place salad greens and chicken in a large bowl. Add half of the dressing and toss to coat. Roll in wraps and serve with remaining dressing. Meanwhile cut the French bread into 4 inch pieces and lightly coat them with extra virgin olive oil and bake in a 360° oven for 7-10 min. After you take them out of the oven add the goat cheese and roasted red and yellow peppers, serve with Caesar salad wraps.
