1. Is the Chef'sChoice® Model 325 sharpener a realistic alternative to a sharpening service?
Yes. The Model 325 is a cost-effective alternative to sharpening services for small commercial kitchens. Its user friendly, two-stage system combines the benefits of substantial savings and advanced technology with the convenience of "on site" and "on demand" usability to give you razor sharp knives anytime.

2. Is the Model 325 sharpener safe for my good cutlery?
Yes. The Chef'sChoice model 325 uses diamond abrasives in Stage 1 and ultra-fine, flexible honing abrasives in Stage 2. These abrasives will not detemper the knife blade. Since the vast majority of resharpening is done in Stage 2, only microscopic amounts of metal are removed. There is no other way to resharpen and remove less metal. 3. What kind of knives will the Chef'sChoice Model 325 sharpen?
It will sharpen a wide variety of gourmet and commercial kitchen knives, including single bevel Asian style knives. Since the Chef'sChoice Model 325 uses diamond abrasives, it will sharpen knives made from the hardest alloys.

4. Can the Model 325 sharpen serrated knives?
Yes, it will realign and sharpen the tips of serrated edges, but use Stage 2 only for serrated knives.

5. How long does it take to sharpen a straight edge blade?
On average, it will take one minute to sharpen most knives. An exceptionally thick knife such as a heavy meat cleaver may require extra pulls through Stage 1 (12-15 sets of pulls rather than 3-5). Also, an extremely dull commercial knife manufactured from extremely hard alloys might require more pulls through Stage 1. Once you have the optimum edge, however, subsequent sharpening will be much faster.

6. What are the differences between the Model 2000 and the Model 325?
The Model 2000 is designed for larger commercial kitchens. It is more powerful and has features not found on the Model 325, such as a replaceable sharpening module that can be removed for cleaning. The Model 325 is more compact and designed specifically for smaller commercial kitchens. It features a built-in "dressing" tool that removes any surface coating accumulated on the Stage 2 disks. Both sharpeners, however, provide the same sharpening capabilities.

7. Do the abrasives in the Model 325 need to be lubricated?
No oils or lubricants are necessary to maintain the diamond abrasives on the Model 325.

8. Will the abrasives on the Model 325 wear out?
The abrasives in the Model 325 are manufactured to last for approximately 3000 sharpenings, depending on number, type and condition of knives sharpened and frequency of use. As the abrasives wear, however, no damage will be done to knives during sharpening. The sharpening process will simply take longer.

9. How do I clean the Model 325?
A built-in "dressing" tool removes surface coating accumulated on the Stage 2 disks from sharpening. The button to engage this tool is located on the back of the sharpener. Underneath the sharpener is a small removable collection cap for emptying knife filings.

10. Is the Chef'sChoice Model 325 Commercial Sharpener NSF rated?
