"In its instructions, the manufacturer of this electric knife sharpener creates the impression that it will put the professional knife-sharpening trade out of business with this do-all device. This sharpener does offer a lot: three slots sharpen, strop, and polish straight-edge and serrated blades. A light touch, together with two swipes-one to favor each side-is recommended for straight blades, while single-sided beveled blades-like bread, tomato and Japanese knives-are best drawn through once along their beveled side. As with every sharpener, a slow, steady draw along these diamond-coated disks does the trick.

"This handsome model, made of aluminum and stainless steel, cuts everything from a loaf of extra-large thick-crusted country bread to a bushel of cucumbers. Slices range from paper-thin to 3/4" thick. The dial for adjusting the thickness of slices is numbered so you can be consistent every time.
